yesterday was very windy, so I went outside with my camera and got a few good photos before all the leaves were on the ground.

There's a lot of work piling up in my back yard, but it'll have to wait for a week or so. I have just cut out a quilt for my daughter Carolyn's' Christmas present. I will be busy!
With the chilly weather comes the craving for comfort foods. Casseroles filled with carbs seem to fix the craving for us. So I have a recipe for you.
Do you eat perogies?
What are perogies? They are a dough dumpling stuffed with a filling such as potato or cheese, typically served with onions or sour cream.
Most of my American friends have never heard of them, but if you're in Canada, then you have no doubt heard of them and even tried them. Perhaps, you even make them.
I love perogies, and homemade ones are the best by far, but it takes a lot of time to make them.
I found this recipe a few years ago and we love it.
Lazy Boy Perogies
6 - 8 Lasagna Noodles
6 cups mashed potatoes
1/4 cup sour cream
2 cups cheddar cheese
Salt to taste
2 tbsp butter
1 cup onion, chopped
8 pieces of bacon, chopped up in one inch pieces
Cook noodles, drain them.
Line bottom of greased 9 x 13 pan with cooked noodles.
In a large bowl mix mashed potatoes, cheese, sour cream and salt.
Put one layer over noodles.
Put second layer of noodles over top.
Saute onion and bacon in butter until done.
Spoon over noodles. Cover with a sprinkling of cheese.
Lightly cover with foil and bake at 350 deg. for 30 minutes.
Let stand 10 minutes before cutting.
Makes 8 servings.
Serve with sour cream.
It may not taste exactly like perogies, but it's a delicious and easy substitute. I put even more onions and bacon on the top of the casserole.
I serve Farmer Sausage and vegetables with this. Fresh cucumbers and tomatoes from the garden are the perfect accompaniment.
I'm eating leftovers for breakfast as I type this... so delicious!!!

My Geraniums are still in full bloom. The Impatiens in the flower boxes froze a couple of weeks ago. You can see the Mountain Ash to the right, so pretty!
